Ginger, Orange and Cardamom Cheesecake

Serves: 12 Ready in: 30 to 60 mins

Ingredients:

75g butter
150g ginger oat biscuits
200g full fat cream cheese
125g condensed milk
1tsp ground cardamom
2tbsp muscavado sugar
1 orange rind and juice
2 free-range eggs
1tbsp icing sugar

method:

  • Allow the butter to soften in a large bowl. Crush the biscuits into crumbs. Add to the butter and mix well.
  • Grease an 18cm round serving dish. Spread the biscuit mixture over the base.
  • Mix together the cream cheese, condensed milk, ground cardamom, muscavado sugar, eggs, orange rind and juice. Pour over the base and bake in a pre-heated (160C/325F/Gas 4) oven for 35-40 mins.
  • Allow to cool in the tin before carefully turning out, then dust the top with sieved icing sugar.
