Strawberry Sensations!

Tzatziki Mashed Potato

Serves: 4

Ready in: 15 to 30 mins

Ingredients:

500g new potatoes, halved if large
200g pot of vegetarian tzatziki
salt and freshly ground black pepper

method:

  • Cook the potatoes in boiling salted water for 20 mins or until tender when tested with fork. Drain then return to the pan. Lightly crush the potatoes with a fork. Add two thirds of the tzatziki and mix well.
