Italian Style Green Bean, Potato & Tomato Salad

Ingredients:

1 pack Cauldron Marinated pieces (160g)
225g French beans, tailed and cut in half
225g baby new potatoes (eg Jersey)
2 tbsp freshly squeezed lemon juice
4 tbsp olive oil
1 garlic clove, crushed
handful fresh chopped thyme leaves
salt and freshly ground black pepper
12 cherry tomatoes, halved
1 lemon, cut into wedges

method:

  • Cook the beans in boiling water for 5-7 mins. Drain and refresh in cold water, then reserve.
  • Cook the potatoes in boiling salted water for 10-15 minutes or until tender.
  • While the beans and potatoes are cooking, mix together the lemon juice, oil, garlic and thyme for the dressing. Season to taste.
  • Toss together the tomatoes, beans, potatoes and marinated tofu pieces and drizzle over the dressing. Serve with a wedge of lemon.
