Ingredients:
6-8 large tomatoes, sliced
1 pack VBites Smoked Style Cheese, sliced
1/2 large cucumber, sliced
1 jar pickled, sliced beetroot
1/2 red pepper, chopped into squares
1/2 yellow pepper, chopped into squares
method:
- Discard the rounded end slices of the tomatoes (these can be chopped finely and used to decorate other canapés).
- For each canapé, start with a slice of tomato, then place a slice of vegan cheese, a slice of beetroot then a slice of cucumber on top.
- Finish each stack off by balancing on a square or either red or yellow pepper.
