Sausage and Puy Lentil Casserole

This recipe was in one of the old cookveg magazines, I was looking for something simple to throw together on a Friday night and it turned out to be really yummy!! It should probably serve more than two as I thought we'd definitely have leftovers but we finished the lot. Ooops!
Ingredients:
4 vegan sausages1 red onion (chopped)
1 celery stick (sliced)
1 carrot (chopped fairly small)
1 garlic clove (although I used 3!)
1 tin of chopped tomatoes
300 ml stock
4 tablespoons puy lentils
I also threw in a big glug of red wine (alcohol makes everything taste better!), some marmite (soy sauce would work well) and a generous amount of thyme.
I served it with potato rosti and squeezed some of the starchy liquid into the pan which thickened it up a treat!
method:
- Pan fry (I grilled) the sausages then slice and put to one side.
- Saute the celery, carrot, onion and garlic for 5 minutes(ish!)
- Add the stock, tomatoes and puy lentils (and red wine, herbs, marmite and anything else you might like to throw in!) cover simmer for 20 minutes.
- Put the sliced sausages back in the pan and cook covered for another 10 minutes or until tender, then serve.
