Greek-style Artichoke Salad with Feta

Ingredients:
1 jar artichoke hearts in oil
150g vegetarian feta, cut into cubes
1/2 cucumber
1/2 small courgette
3 medium tomatoes
8 cherry tomatoes
1 small red onion
12 black olives

2 tbsp oil from the artichokes
1 tbsp red wine vinegar
1/2 tsp sugar
sea salt
freshly ground
black pepper
method:
- Drain the artichoke hearts and cut large ones in half. Reserve 2 tbsp of the oil for the dressing.
- Cut the cucumber in half lengthways and scrape out the seeds. Cut each half into two (lengthways) and slice into wedges. Chop the courgette into quarters lengthways; cut into diagonal slices. Cut the tomatoes into large chunks. Peel and slice the red onion thinly.
- Place the salad vegetables into a large bowl. Add the artichokes, olives and the cheese.
- Make the dressing by combining 2 tbsp of oil from the artichokes with the vinegar and sugar. Season with salt and pepper and beat together. Pour the dressing over the salad and toss well.
