Thickly slice the shiitake and fry over a gentle heat for 25 minutes in butter or oil until they become slightly crispy and their flavours develop.
Pile the mushrooms on the toasted bread, top with sliced cheese and a scatter of rocket leaves and drizzle with the chilli oil.
Add the sandwich lid and serve.
